A friend emailed me the recipe for a single serving of cake. I called it the 3-2-1 cake for reasons which will become obvious once you see the recipe.

Ingredients:
1 box Angel Food Cake mix
1 box cake mix of your choice

Mix both boxes and store in an airtight container i.e. tupperware, ziplock bag.

Place the following in a large mug:
3 tablespoons cake mix
2 tablespoons water......mix
1 minute in microwave

Garnish with your favorite topping i.e. ice cream, fruit, whipped cream, etc.

I used Angel Food and Yellow cake mixes. This is what mine looked like in the mug and on a plate.
I ate it plain. It was delicious.

That looks good. It really fluffed up. I think I may try this, as it seems to be a quick fix for a sweet craving.

I also tried this using strawberry and angel food mixes. My 11 year old granddaughter loves it (especially seeing it rise in the mug). She makes her one almost every afternoon she is with me.

I don't think it is as good of course as just an angel food cake or other but it is easy and only takes a minute.

I have made this with a sugar-free chocolate cake mix. It tasted pretty good. If you're looking for diabetic desserts the Pillsbury sugar-free chocolate mix is good; I've got a box of Pillsbury's sugar-free yellow cake to try also.
