Does anyone out there in Yulelog Land have a good caramel cake recipe? My favorite uncle did something really nice for me, and I'd like to thank him by making his favorite cake. My grandmother, God bless her, used to make him caramel cakes three or four times a year. I don't think he's had one since she died September 11 six years ago. (My aunt doesn't cook much.) I'd appreciate your help!

Do you mean a cake that caramels in it? There is that Snicker Cake recipe that has chocolate chips, caramel, and nuts in it.

Dee, this cake does not have caramels in it. It has a caramel icing. I can't remember how it's made because I haven't made one/helped make one in years. And I can't find my grandmother's recipe.

You're not thinking of a spice cake with brown sugar icing are you? It's actually not a brown sugar icing but some people call it that. It is a funny name in the Betty Crocker cookbook. Peniese...something like that.

I have a recipe that's basically like a brown sugar pound cake with caramel icing and bits of Heath Bar Crunch, both in the batter and as garnish over the icing - does that sound similar? Was the cake more like a pound cake texture (heavier/dense) or a lighter, airier texture (like those box mixes you can get at the grocery store)?

Forgot to add I have a digital picture of the last caramel cake I made if you want to see what it looks like and whether it's anything like what you wanted.

Melody: I have 3 different Caramel Cake recipes. Does this one sound right? This one sounds most like what you're describing. The other 2 both have nuts in the frosting.

Caramel Cake

Makes 2 layer 9 inch cake (24 servings).

1 3/4 cups white sugar
1/3 cup hot water
3 cups sifted cake flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter
3 eggs
1 teaspoon vanilla extract
2/3 cup milk

Directions
1)Preheat oven to 350 degrees F (175 degrees C). Line two 9 inch pans with parchment paper. Sift flour, baking powder, and salt together 3 times. Set aside.

2)Make caramel syrup. In a heavy skillet, heat 1/2 cup of the sugar, stirring constantly as sugar melts. Continue to cook and stir until melted sugar becomes dark brown. Remove from heat. Add hot water very slowly and stir until dissolved. Set aside to cool.

3)In a large bowl, cream shortening with remaining 1 1/4 cups sugar until light and fluffy. Add eggs one at a time, beating thoroughly after each. Add vanilla and 3 tablespoons of the caramel syrup. Add flour mixture and milk alternately and beat until smooth.

4)Pour batter into two 9 inch pans. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until a toothpick inserted into cake comes out clean.
